What I checked
The Old Country is the earliest setting, 1904–1907, and the most linear of the recent entries. Mafia: Definitive Edition (2020) remakes the 1930s story of the first game. Mafia II is 1945–1951 and is the one Empire Bay players already know, which is where Isabella is headed. Mafia III is 1968 and is the largest map in the series. If you liked The Old Country because it was short and directed, play the 2020 remake or Mafia II before Mafia III.
Which one to open next
You do not need to play them first. The Old Country is a prequel, not a sequel that assumes the 2002 plot. The play-order page says that at more length.
